WHY MAKE YOUR OWN COCONUT MILK?

Making your own coconut milk, coconut flour, and coconut milk powder can be much more cost-effective than buying them at the store. Store-bought coconut products can be quite pricey, and making them at home can save you a significant amount of money in the long run. Especially if you are buying organic and looking for products that are free from additives & gums!

Additionally, if you live in an area where fresh coconuts are readily available, you can save even more by using fresh coconut flesh to make your own coconut milk, coconut milk powder & coconut flour.

When buying coconut milk and coconut milk powder at the store, you may have noticed that they all contain either chemical additives, processed ingredients & or emulsifiers. Making your own gives you control over what is in your coconut milk!

When you make your own coconut products, you have complete control over the quality of the ingredients you use. You can choose to use organic, non-GMO coconuts and avoid any additives or preservatives or emulsifiers that may be found in store-bought products. This means you can ensure that your coconut products are as healthy and natural as possible.

Fresh coconut milk, coconut flour, and coconut milk powder made at home will be much fresher than store-bought products, which may have been sitting on the shelf for months. Fresh coconut products will have a better flavour and aroma, and will also retain more of their nutritional value. Trust me, when see how easy it is to make & you taste this homemade version, you’ll never buy store bought again!

how to make WHITE mango cardamom chia pudding

steps to make mango cardamom chia pudding

  1. Mise en place: As always, being prepared is a must! Having all of your ingredients and equipment ready as well as understanding the recipe instructions will make this a smooth and easy peasy process!
  2. Add warmed (preferably fresh) coconut milk to a releasable jar / container. 
  3. Add maple syrup, pure vanilla extract (or vanilla bean pods), ground cardamom, sea salt, & whole chia seeds. Whisk together immediately or chia seeds will clump together.
  4. Let the mixture rest for 15 mins (for slightly runny) to 30 mins (thicker consistency).
  5. Add toppings: fresh cubed mango, spoonful of warm coconut milk, pinch of saffron & freshly ground cardamom. Add slivered almonds (optional) to top.
  6. Enjoy warm or cold if you prefer!

Storage instructions

I promise you will have this chia pudding gobbled up within the work week! You’ll need to store it in the refrigerator though. So, if you’re like me, and you like a warm breakfast, simply pop it in the microwave at medium power for 1-2 mins until just warmed. It will return to the soft texture it had when you 1st made it. Then just top with your fresh cubed mango, spoonful of warm coconut milk, saffron, cardamom, optional almonds and enjoy!

  • 1 Large Container with lid
  • 1 Whisk
  • 1 * Mortar & pestle optional - for freshly ground cardamom

INGREDIENTS
 

  • 700 mL Coconut Milk warmed
  • 15 mL Pure Vanilla Extract or vanilla bean
  • 45-60 mL Pure Maple Syrup or other sweetener or your choice e.g. agave syrup
  • 7.5 mL Cardamom ground + 6 whole cardamom pods (optional)
  • 1 pinch Sea Salt Himalayan Pink Sea Salt
  • 175 mL Whole Black Chia Seeds 3/4 cup (125g)
  • 1 pinch Safrron
  • 1 Mango cubed
  • 1 pinch slivered almonds *optional

INSTRUCTIONS

  • Add warmed (preferably fresh) coconut milk to a jar / container with a lid. 
    700 mL Coconut Milk
  • Add maple syrup, pure vanilla extract (or vanilla bean pods), ground cardamom, sea salt, & whole chia seeds. Whisk together immediately or chia seeds will clump together.
    15 mL Pure Vanilla Extract, 45-60 mL Pure Maple Syrup, 7.5 mL Cardamom, 1 pinch Sea Salt
  • Let the mixture rest for 15 mins (for slightly runny) to 30 mins (thicker consistency)
  • Add toppings: fresh cubed mango, spoonful of warm coconut milk, pinch of saffron & freshly ground cardamom. Add slivered almonds (optional) to top.
  • Enjoy warm or cold if you prefer!

Notes

  • Once refrigerated the chia pudding will thicken up significantly. If you'd like it softer, just reheat slightly on stovetop over low heat or in the microwave on medium power for 1 min
