WHAT IS SWEET RICE FLOUR? WHAT IS SWEET RICE?
Sweet rice is a serious powerhouse of gluten free baking! It is bound to become one of your staples in your gluten free kitchen! It is a secret ingredient that many successful gluten free bakers swear by!
WHAT IS SWEET RICE?
Sweet Rice is also known as “glutinous rice” but don’t let the name fool you! It contains NO gluten. The term “glutinous” simply refers to its ability to act like glue. In this way sweet rice is a perfect use for us gluten free bakers who need to replace the power of gluten in binding our bakes!
Sweet rice is a short grain, starchy rice that is grown mostly in SE and Eastern Asia. It is used commonly in Asian cooking, like Japanese Mochi which are Japanese rice cakes (use Mochiko flour = sweet rice flour). Sweet rice is milled to create sweet rice flour!
WHAT MAKES SWEET RICE SO STICKY?
Sweet rice has a very low amylose starch content (a resistant starch) and a much higher amount of amylopectin starch than other rice varieties (makes it sticky).
SWEET RICE FLOUR POWER! - USES
Sweet Rice Flour is an absolute indispensable staple in my gluten free baking! Here are some of its uses:
- Binding Flour – used to help bind ingredients together.
- High Starch Content – makes it a great thickener for soups, sauces, gravies, & batters (like pancakes).
- Baking will flake instead of crumble – like with gluten free pastry!
- Incredibly absorbent which helps to maintain moisture in your bakes (including cakes).
- Helps maintain structure in doughs & batters while cooking.
is sweet rice flour = white rice flour?
No. Unfortunately, widely available white rice flour is completely different than sweet rice flour and sadly they are not in any way interchangeable.
Sweet Rice Flour has the above mentioned qualities of a binding flour.
White Rice Flour has an opposite role. It is ground from medium-long grain white rice. It brings a lightness & crunch to your gluten free bakes. It is not a good absorber and can dry baked goods out. It definitely plays a role in GF baking, just not the same role as Sweet Rice Flour unfortunately.

- SWEET RICE – I recommend buying an organic, gluten free rice if possible as this will create the best flour. However, organic sweet rice can be hard to find! So do your best and non-organic works too.

Ever go to the store looking for a specific gluten free flour and they are sold out? I sure have! In fact, I have been on the hunt for certain flours for hours, scouring stores, only to be left disappointed. Yes, we can order online, but what if you want to bake right now? Knowing how to make your own gluten free flours means freedom to bake when you want to!

- Often save money by buying rice in large bags & grinding yourself!
Yes! Sweet Rice is naturally free from gluten, however, where things get tricky is in the farming & the processing facilities. If the rice is processed and packed in a facility that is not dedicated to gluten free, there is always a risk of contamination. It has also been stated by some that if the rice crop is not grown in a dedicated gluten free zone, then gluten can contaminate the crop as well.
This is why I suggest using organic, gluten free sweet rice, but of course the choice is totally yours!
This is a tricky one, I have not tried this and don’t believe that the coffee grinder would be powerful enough to make the flour fine enough for gluten free baking. Superfine sweet rice flour will produce lighter, more delicate treats, allowing for more lift & expansion of your doughs!
With that said, if all you have is a coffee grinder, give it a try. Grind a VERY small amount at a time and sift several times. It may just work!
NO! Sweet Rice Flour is a very sticky (glutinous = like glue but contains NO gluten). White Rice is not the same thing and much less sticky. White Rice Flour can not be used as a binding flour the way the Sweet Rice Flour can. Do NOT substitute white rice for sweet rice as they are not the same! You can make white rice flour in a similar way, however, it is used totally differently in gluten free baking. See above for more details

How to make your own Sweet Rice Flour
Equipment
- 1 High Speed Blender e.g. Vitamix
- 1 Large Bowl
- 1 Towel & or Paper Towel
- 1 Baking tray
- 1 Air Tight Container
Materials
- 2 cups Sweet Rice Organic and Gluten Free (400g)
- 4 cups Fresh Water
Instructions
Step 1: Wash Rice Grains
- Add rice grains to a bowl, cover with water and swish around with hands
- Over the sink, pour rice through fine mesh strainer, then rinse under water tap until water runs clear.
Step 2: Dehydrate Rice Grains
- Pour cleaned rice onto towel and pat dry with towel and or paper towel.
- Pour rice onto baking tray lined with parchment paper.
- Dehydrate in oven at 150°F (66°C) for 30 mins. If no dehydrate setting, put oven to lowest temperature (usually around 175°F = 79°C) and dry for 15-20 mins. Dehydrate until rice is completely dry and slightly toasted.
- * Make sure to dry your fine mesh strainer completely as you will use it again.
Step 3: Grind Rice Grains to a fine powder
- Use parchment paper to put all rice into high speed blender.
- Grind on low then increase to high for 30 seconds (until reaches a very fine powder consistency).
- Store your DIY brown rice flour in an airtight container and use within 1 month for best results!
Notes
- See FAQ above to see if you can use your blender or a coffee grinder.
- Sweet Rice Flour is NOT the same thing as White Rice Flour or Rice Flour. They have completely different properties and can't be used interchangeably!
