4cupsWater1 cup hot water, 3 cups room temp water

1piecedried fruit of choice (e.g. date or prune)optional
Instructions
Add sugar to 1 cup hot water to dissolve in a large mason jar. Then add 3 cups of room temp water. Stir.
1/4 cup Cane Sugar, 4 cups Water
Add water kefir grains & gently stir.
1/4 cup Water Kefir Grains
Add lemon & dried fruit
1 piece dried fruit of choice (e.g. date or prune), 1 slice lemon
Cover with cloth & place elastic over to keep insects out. Let rest (1st ferment) for 48-72 hours.
Strain kefir into the large flip top glass bottle (or large mason jar with lid). Set grains aside. You can drink the kefir at this point or proceed to 2nd ferment to flavour & add carbonation!
Place kefir grains in a glass jar with a little of the 1st ferment liquid & store in refrigerator for up to 2 weeks.
Add fruit &/ herb infusion to the water kefir & close lid.
20-30 pieces Fresh Fruit & or Herbs
Let rest (2nd ferment) @ room temperature for 24 hours to gain carbonation & flavour. Burp (by opening lid) every 8 hours to release some pressure.
Refrigerate after 24 hours. Continue to burp 1x/day.
Enjoy cold or at room temperature! You can strain the fruit & herbs out or drink it with them.
