This is a simple recipe for mung bean khichdi. A great healthful alternative to rice as a base to any curry.

I use Basmati Rice

Split Mung Beans

Butter (or Vegan alternative)
INSTRUCTIONS
Rinse rice and mung beans with water a few times.
Add rice and mung beans to a pot with four cups of water and 1/2 tsp of salt.
Bring to a boil on medium heat stirring occasionally.
Once the water is boiling, reduce the heat to low, stir, and cover. Simmer until all of the water is absorbed.
Turn off heat and add butter. Mash the khichdi and serve with yogourt, Kadhi Curry, or another curry dish.
